What type of beans should I be using?

Is there a certain roast I should use?

Contrary to popular belief, espresso is not a specific type of coffee bean. When you see a package of coffee listed as “espresso,” it only means that the coffee roaster recommends that blend for use in an espresso machine. In general, any roasted coffee can be used in any type of extraction method, including espresso.

What's important, however, is that you are using a freshly roasted bean (ideally within 7-21 days post-roast) and grinding it to size right before use. Pre-ground coffee will not work on a Flair, aside from the NEO and it's pressurized Flow-Control portafilter. This ensures freshness and allows you to dial in the grind size specific to your roast, dose, and recipe being used.
