How do I operate the Flair 58 Temp Controller?

The Flair 58’s Preheat Control System can preheat the brew cylinder to three different temperatures: Low, Medium or High, to correspond to different roast levels. We recommend preheating with your lever raised with the plunger at the top of the cylinder, to "lock in" the heat. It's also good practice to preheat with your portafilter installed.
